Chilli Potato Wedges

Quick and easy wedges to go with any tasty meal on the side or in a bowl to share!

    Heat the oven up to 200 degrees centigrade. Whilst this is heating up, wash the potatoes and chop them into quarters. Hold the potato together as a whole to make sure the "wedge" shape is achieved!

    Arrange the wedges onto a large clean baking tray with high edges and drizzle the olive oil over the top.

    Sprinkle the mixed herbs and chilli flakes over the top of the wedges. Grind as much black pepper as preferred on each one to add a bit more flavour and heat.

    Mix the wedges in the oil within the tray and rearrange on the tray to spread them out evenly.

    Put the wedges in the oven on the top shelf and leave for 20 minutes or until crispy. Use a spatula after 10minutes to turn the wedges over for even cooking!

    Dab off the oil with a piece of kitchen roll to remove the excess and present in a bowl or on your plate to serve. Enjoy with sour cream or extra sweet chilli sauce for dipping!
