Tzatziki Mashed Potato
Ingredients
- 500g new potatoes, halved if large
- 200g pot of vegetarian tzatziki
- salt and freshly ground black pepper
Method

Cook the potatoes in boiling salted water for 20 mins or until tender when tested with fork. Drain then return to the pan. Lightly crush the potatoes with a fork. Add two thirds of the tzatziki and mix well.
