Leafy Salad with Pomegranate Dressing
“This salad couldn't be simpler. If you've not tried it, pomegranate molasses is a tangy syrup made from pomegranates. You can buy it from many major supermarkets and it makes a fantastic salad dressing. We especially love this salad with Mediterranean or Moroccan Bites”
Ingredients
For the dressing
- 2 tbsp pomegranate molasses
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice/sherry vinegar
- salt and pepper
For the salad
- 2 bags salad leaves – the one with grated beetroot looks really pretty
- 1 pack fresh pomegranate seeds
- 1 pack Great Food Moroccan or Mediterranean Falafel Bites
Method
- 1
Put all the dressing ingredients in a jar and shake well to mix. Season with salt and pepper to taste.

Split the leaves between four bowls and dress them lightly. Sprinkle with pomegranate seeds.

Warm the falafel in the oven, break in half and divide between the bowls.
