Tomato and Smoked Paprika Roasted Aubergines
One of the most popular recipes on this website, these aubergines offer a full on smokey flavour that's incredibly moreish
Ingredients
- 2 aubergines, cut in half and cut with criss-cross
- olive oil, for drizzling
- 1 jar Belazu Tomato and Smoked Paprika Sauce
- 100g vegetarian feta
- 1 sprig of fresh chopped mint
- cooked couscous, to serve
Method

Preheat the oven to 200C/400F/Gas 6. Place the aubergines in a baking dish and drizzle with olive oil. Roast for 30 minutes.

Remove and spread with the jar of sauce and return to the oven for a further ten minutes. Crumble over the feta and chopped mint and serve with cooked couscous.
