Sweetcorn Fritters
Ingredients
- 110g sweetcorn
- 1 free-range egg white, whisked until soft peaks
- 110g self-raising flour
- 1 tbsp baking powder
- 1 free-range egg
- 1/4 pint milk
- pinch of chilli flakes
- 55g unsalted butter
For the salsa
- 1 beef tomato, chopped
- 2 roasted peppers, drained and chopped
- 1 large spring onion, finely chopped
- handful fresh basil, torn
- 1/2 lime, juice only
- 1 tsp olive oil

Stir the salsa ingredients together, and leave to infuse while you cook the fritters.

Place the sweetcorn in a food processor and blitz to form a purée. Transfer to a bowl and fold in the egg white. Mix in the flour, baking powder, egg, milk and chilli flakes to form a batter.

Gently melt the butter in a frying pan over a medium heat. Spoon the mixture into the pan to make 4-6 fritters. Fry for 2-3 minutes on either side, until golden and crisp.

Remove the fritters from the heat and transfer to a plate. Serve with the salsa alongside, and lots of seasonal vegetables or salad.
