Stir-Fried Eggs

Ingredients
  • 2 tbsp vegetable oil
  • 200g tray stir-fry vegetables
  • 1 tbsp sweet chilli sauce
  • 1 large Lion Quality egg, beaten
  • stir-fry rice noodles to serve
Method
  • 1

    Heat the oil in a large frying pan or wok; add the vegetables and stir fry for three minutes or until soft.

    Add the chilli sauce and two tablespoons of water and stir fry for one minute.

  • 3

    Add the beaten egg to the pan and cook for one minute or until set slightly before stirring to mix with the vegetables. Serve with noodles.
