Sausage and Puy Lentil Casserole
This recipe was in one of the old cookveg magazines, I was looking for something simple to throw together on a Friday night and it turned out to be really yummy!! It should probably serve more than two as I thought we'd definitely have leftovers but we finished the lot. Ooops!
Ingredients
- 4 vegan sausages
- 1 red onion (chopped)
- 1 celery stick (sliced)
- 1 carrot (chopped fairly small)
- 1 garlic clove (although I used 3!)
- 1 tin of chopped tomatoes
- 300 ml stock
- 4 tablespoons puy lentils
- I also threw in a big glug of red wine (alcohol makes everything taste better!), some marmite (soy sauce would work well) and a generous amount of thyme.
- I served it with potato rosti and squeezed some of the starchy liquid into the pan which thickened it up a treat!
Method

Pan fry (I grilled) the sausages then slice and put to one side.

Saute the celery, carrot, onion and garlic for 5 minutes(ish!)

Add the stock, tomatoes and puy lentils (and red wine, herbs, marmite and anything else you might like to throw in!) cover simmer for 20 minutes.

Put the sliced sausages back in the pan and cook covered for another 10 minutes or until tender, then serve.
