Pea, Bean & Avocado Dip
Ingredients
- 110g freshly podded broad beans
- 100g fresh peas
- 1 tomato, deseeded and chopped
- 1 ripe avocado, halved, destoned and flesh scopped out
- juice of 1 lemon
- 2 tbsp olive oil
- salt and pepper to taste
Method

Boil the broad beans and peas in separate pans for 2-3 minutes.

Place the tomato, avocado and lemon juice to a medium sized bowl and stir well.

Add the broad beans, peas and olive oil then season to taste.
