Pea, Bean & Avocado Dip

Ingredients
  • 110g freshly podded broad beans
  • 100g fresh peas
  • 1 tomato, deseeded and chopped
  • 1 ripe avocado, halved, destoned and flesh scopped out
  • juice of 1 lemon
  • 2 tbsp olive oil
  • salt and pepper to taste
Method
  • 1

    Boil the broad beans and peas in separate pans for 2-3 minutes.

    Place the tomato, avocado and lemon juice to a medium sized bowl and stir well.

  • 3

    Add the broad beans, peas and olive oil then season to taste.
