Pea and Mint Houmous

A great quick cheat using lemon yoghurt as a base. If you're using frozen peas for this recipe, simply cover with boiling water, leave for two minutes then drain.

Ingredients
  • 175g fresh podded peas, or frozen peas, defrosted
  • 1 small garlic clove, crushed
  • pinch of salt
  • 4 tbsp Onken Sicilian Lemon yoghurt
  • 1 tbsp freshly chopped mint leaves
To serve/hd]
  • crackers, pitta crisps or a selection of vegetable crudités
Method
  • 1

    Cook peas in lightly salted water for two minutes. Drain and cool under cold water. Tip into a food processor, add garlic, salt and yoghurt and whiz until puréed. Add mint and whiz again.

    Serve with crackers, pitta crisps or vegetable crudités.
