Pea and Mint Houmous
A great quick cheat using lemon yoghurt as a base. If you're using frozen peas for this recipe, simply cover with boiling water, leave for two minutes then drain.
Method

Cook peas in lightly salted water for two minutes. Drain and cool under cold water. Tip into a food processor, add garlic, salt and yoghurt and whiz until puréed. Add mint and whiz again.

Serve with crackers, pitta crisps or vegetable crudités.
