Kale with ginger, garlic and chilli
Ingredients
- 200g kale
- ginger
- 4 spring onions
- groundnut oil
- half a chilli
- garlic
- onion
- lime
Method

Place 200g kale in a saucepan, and bring to the boil, then simmer for 4 mins. Finely chop a 2cm piece of ginger and cut 4 spring onions into 3cm lengths. Drain kale and heat 2 tbsp groundnut oil in a pan. Add half a sliced chilli, 1 chopped garlic clove plus the ginger and onions and cook for 2 mins. Add the kale and stir well. Cook for about 1 1/2 mins, constantly tossing. Season and serve with a squeeze of fresh lime.
