Griddled Halloumi with Pomegranate Salsa

This delicious recipe makes for a pretty and mouthwatering starter

Ingredients
  • 150g pomegranate seeds
  • 1 small red chilli, deseeded and finely chopped
  • 1/2 red onion, finely chopped
  • 2 tsp pomegranate syrup
  • 1 lime, finely grated zest
  • 4 tbsp chopped fresh coriander
  • salt and freshly ground black pepper
  • 4 Yamas! Halloumi Burger Slices, cut into 8 strips
  • little flour, for dusting
  • olive oil, for brushing
Method
  • 1

    To make the salsa: Place all the ingredients in a bowl and stir well. Season with salt and freshly ground black pepper. Leave to stand for 30 minutes, to allow the flavours to develop.

    Dip each strip of halloumi cheese in cold water, then coat in a little flour.

    Brush a frying pan with a little oil. Heat over a medium heat until hot, then griddle the cheese for about 30 seconds on each side, or until it is lightly golden. Serve immediately with a large spoonful of the pomegranate salsa.
