Fast and Furious Veggie Fajitas
Everyone loves these fajitas - just leave the ingredients out for people to build their own as they want them
Ingredients
- 1 tbsp vegetable oil
- 1 red pepper, deseeded and sliced
- 1 yellow pepper, deseeded and sliced
- 4 spring onions, trimmed and sliced
- 100g mushrooms, sliced
- 1 sachet Discovery Fajita Seasoning Mix
- 4 Discovery Soft Flour Tortillas
- Discovery Guacamole Style Topping
- Discovery Hot Pepper Sauce
- Discovery Garlic and Herb Soured Cream
Method

Heat the vegetable oil in a wok or large frying pan and stir-fry the peppers, spring onions and mushrooms for 4-5 minutes. Stir in the fajita seasoning mix.

Warm the tortillas, then spread a generous amount of guacamole topping over each one. Share the pepper mixture between them. Add a few shakes of hot pepper sauce and spoon some garlic and herb soured cream on top. Roll up and serve.
