Easy Blueberry Bread & Butter Pud
The lemon and blueberry combo in this recipe is simply divine
Ingredients
- four crustless lemon curd sandwiches
- butter
- 150g blueberries
- 3 three free-range eggs
- 150ml milk
- 150ml double cream
- 50g caster sugar
Method

To feed four, make the crustless lemon curd sandwiches, cut each into eight cubes, place in a buttered oven dish and scatter with the blueberries. Whisk the eggs with the milk, double cream and caster sugar. Pour over the sandwiches, leave for 20 minutes, drizzle with melted butter, scatter over a little sugar and bake for 30-35 minutes at 180C/350F/Gas 4 until golden and just set. Enjoy with cream or ice cream.
