Cheesy Tomato Tagliatelle with Parsley
I came up with this dish because I only like cheese when it is melted and it is delicious in this sauce. This is instead of just scattering grated cheese over pasta. Feel free to add more cheese if you want. I hope you enjoy it.
Method

Fill a large saucepan with hot water and bring to the boil. Add a good pinch of salt and add the tagliatelle. Cook for about 10-12 minutes or for however long is required. When the pasta is cooked, drain and leave in the colander.

Reduce the heat and put the pan back on the hob. Add the passata and a pinch of sugar and bring to the boil.

Add the grated cheese and leave it to melt for a few minutes. Add in a pinch of salt and pepper and taste to see if it needs more seasoning (don't add too much salt because the cheese is salty). Then add in the finely chopped parsley.

Add the tagliatelle into the pan and stir until it is all evenly covered in the tomato sauce. Serve.
