Braised Red Cabbage
Ingredients
- 25g butter
- 1 onion, finely chopped
- 500g cabbage, thinly sliced
- 2 tbsp light muscovado sugar
- 2 tbsp red wine vinegar
- 1 tsp ground mixed spice
- 150ml apple juice
- sea salt and freshly ground black pepper
- 225g blackberries
Method

Melt the butter in a saucepan and fry the onion for 3-4 minutes. Stir in the cabbage along with the sugar, vinegar, mixed spice and apple juice.

Season, cover and cook gently for 30 minutes, stirring occasionally. Add the blackberries, gently cook for a further 10 minutes and serve.
