Barbecued Potatoes

You needn't just cook skewers or veggie burgers on the barbecue; just a sheet of strong foil opens your barbecue up to lots of news dishes, like these scrumptious potato wedges

Cost Cutting Eco Friendly Quick Make Vegan Friendly

Ingredients
  • 4 medium smooth potatoes, such as Desiree, cut into wedges
  • 1 onion, peeled and cut into wedges
  • 1 red pepper, deseeded and cut into wedges
  • 1 yellow pepper, deseeded and cut into wedges
  • 2 eating apples, cored and cut into wedges
  • 2 tbsp olive oil
For the Barbecue Sauce
  • 4 tbsp tomato ketchup
  • 1 tbsp malt vinegar
  • 1 tbsp mustard
  • 5 tbsp orange juice
Method
  • 1

    Preheat the oven to 200C/400F/Gas 6. Place all ingredients (except for the barbecue sauce) into a sandwich bag and toss to coat.

    Place on a baking tray and roast in the oven for 25 minutes until brown and tender.

    Meanwhile, place all the ingredients for the barbecue sauce in a bowl and bring to the boil. Place in a ramekin.

  • 4

    Remove from the oven and place in a bowl to serve, with the ramekin of barbecue sauce alongside to dip into.

  • PER SERVING: 4.4g FAT (Excluding extras)
