Barbecued Asparagus with Lemon and Mint Butter
If the sun doesn't shine, you don't have to cook these on the barbecue. A good griddle pan will give you that same tasty charred flavour

Trim the asparagus as necessary. Place on a baking sheet or in a bowl and toss with the oil, making sure all of the asparagus is well coated.

Put the asparagus on the grill rack of the barbecue and cook for approximately two minutes on each side, until it is lightly charred. Remove from the barbecue and divide between four serving plates.

Melt the butter. Add the lemon juice and chopped mint. Pour over the asparagus, season and sprinkle with the Parmesan-style cheese shavings.
