Banana Chip Cookies

Ingredients
  • 350g plain flour
  • 1 tsp bicarbonate of soda
  • 250g butter
  • 175g Fruisana fruit sugar
  • 2 large free-range eggs
  • 1 tsp vanilla essence
  • 1 large ripe banana
  • 100g banana chips
  • 100g glace cherries, chopped
Method

    In a large bowl sieve the flour and bicarbonate of soda, and rub in the butter until the mixture resembles breadcrumbs. Stir in the fruit sugar.

    Beat in the eggs and vanilla essence. Mash the banana and stir into the mixture with the banana chips and chopped cherries to produce a soft mixture.

    Place tablespoons of the mixture onto greased and lined baking trays. Bake in the oven at 180C/350F/Gas 4 for 18-25 minutes until set and lightly gold. Place on wire rack to cool before serving.
