10-minute Vegetable Rice

Heat the oil in a large non stick frying pan or wok. Add all of the vegetables and cook over a high heat for 2-3 minutes, until just soft

Add the sugar snap peas or mangetout, baby sweetcorn, red pepper and the sliced courgette and mushrooms. Stir fry and continue to cook for 1-2 mins.

Stir in the Uncle Ben’s Oriental Soy Sauce & 5 Spice Wok Rice and cook for a further 1-2 minutes. Spoon into bowls and garnish with chopped peanuts.
