Split Pea Soup with Spicy Moroccan Drizzle

Ready in 30 to 60 mins

Ingredients

  • 225g dried split yellow peas
  • 1/2 vegan vegetable stock cube
  • 1 onion, chopped
  • 2 tbsp cold-pressed rapeseed oil
  • 1 tsp ground cumin
  • 1/2 tsp hot chilli powder
  • 1 tbsp chopped coriander

How To Cook

  1. Place the split peas, stock cube, onion and 1lt boiling water in a pan, cover and simmer for 40 mins.
  2. Meanwhile, mix the oil with the spices and herbs. Purée the soup until smooth and serve with a drizzle of the Moroccan oil.

i made this and it was ok but a little bit thick so i made it again today but this time i added a yellow pepper and uped the stock by 1/4lt and boy oh boy had a bowl to try and its just great am now on my second bowl

you have to try this its a must and so easy to make too

oh i didnt make the drizzle bit cant stand chillies!!!!
