Ready in 30 to 60 mins

Ingredients

  • 175g oatmeal
  • 1 tsp bicarbonate of soda
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 175g wholewheat flour
  • 470g jar unsweetened or homemade apple pureé
  • 1 eating apple, diced
  • 4 free-range egg whites, lightly beaten
  • 200ml honey
  • 150ml low fat natural yoghurt
  • Flora Original for greasing

How To Cook

  1. Preheat the oven to 180C/350F/ Gas 4. Measure and prepare all the ingredients as stated above.
  2. Sieve the dry ingredients into a large mixing bowl. Add the apple pureé, diced apple, egg whites, honey and yoghurt.
  3. Stir gently until all the flour is incorporated. Pour the batter into 24 greased mini muffin tins. Bake for 15-20 minutes and carefully take out of the oven when golden. Leave the hot muffins to cool for a while then enjoy warm or cold. Also try adding some juicy raisins to the mix for added flavour.
