Apple Muffins
Ingredients
- 175g oatmeal
- 1 tsp bicarbonate of soda
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 175g wholewheat flour
- 470g jar unsweetened or homemade apple pureé
- 1 eating apple, diced
- 4 free-range egg whites, lightly beaten
- 200ml honey
- 150ml low fat natural yoghurt
- Flora Original for greasing
How To Cook
- Preheat the oven to 180C/350F/ Gas 4. Measure and prepare all the ingredients as stated above.
- Sieve the dry ingredients into a large mixing bowl. Add the apple pureé, diced apple, egg whites, honey and yoghurt.
- Stir gently until all the flour is incorporated. Pour the batter into 24 greased mini muffin tins. Bake for 15-20 minutes and carefully take out of the oven when golden. Leave the hot muffins to cool for a while then enjoy warm or cold. Also try adding some juicy raisins to the mix for added flavour.
