Ginger, Orange and Cardamom Cheesecake

Ingredients

  • 75g butter
  • 150g ginger oat biscuits
  • 200g full fat cream cheese
  • 125g condensed milk
  • 1tsp ground cardamom
  • 2tbsp muscavado sugar
  • 1 orange rind and juice
  • 2 free-range eggs
  • 1tbsp icing sugar

How To Cook

  1. Allow the butter to soften in a large bowl. Crush the biscuits into crumbs. Add to the butter and mix well.
  2. Grease an 18cm round serving dish. Spread the biscuit mixture over the base.
  3. Mix together the cream cheese, condensed milk, ground cardamom, muscavado sugar, eggs, orange rind and juice. Pour over the base and bake in a pre-heated (160C/325F/Gas 4) oven for 35-40 mins.
  4. Allow to cool in the tin before carefully turning out, then dust the top with sieved icing sugar.
