Quorn Wild Garlic & Parsley Toulouse Sausage Casserole
Casseroles can flummox even the most experienced veggie cook but this is an excellent place to start
Method

Heat the oil in a large pan and sauté the onion, garlic and carrots for 2-3 minutes, or until soft.

Add the herbs and stir in the purée and wine. Cook for another two minutes.

Add the lentils, stock and mustard, bring to the boil and simmer gently for 35-40 minutes

Meanwhile, cook the Quorn sausages under a hot grill until golden brown then add to the casserole 10 minutes before the end of cooking time.

Taste and season with freshly ground black pepper if necessary.
