Quick and easy super-nutritious breakfast flapjacks
These flapjacks are so nutritious, they are great for breakfast, snacks or dessert. The best thing is, they are so quick to make, I make them at the weekend and that's my breakfast ready for the week ahead! I haven't added any measurements as I think its best to go by how it looks! This recipe is also very adaptable- try adding dried dates and cranberries and hazelnuts or anything you fancy! They can also be made vegan by using non-dairy butter. If you prefer a chewy flapjack to a crunchy one, put in the fridge instead of cooking.
Ingredients
- Butter
- Wholegrain oats
- Raisins
- Sultanas
- Seeds mix
- Peanut butter
- Honey
- Ground almonds
- Vanilla extract
- Almond extract
- Cinnamon
Method
- 1
Melt the butter in a large saucepan and stir in the oats.
- 2
Add all the other ingredients and give it a good mix.

Empty mixture into a baking tin lined with baking paper and cook for 20 mins on a low to medium heat or until golden.

Allow to cool before cutting into even blocks.
