Jersey Royals Sag Aloo

Ingredients
  • 900g Jersey Royals, scrubbed
  • 25g butter
  • 1 large onion, thinly sliced
  • 1 garlic clove, thinly sliced
  • ½ tsp cumin seeds
  • ¼ tsp ground turmeric
  • 1 tsp garam masala
  • 2 tsp grated fresh root ginger
  • 200g young leaf spinach
  • salt and freshly ground black pepper
Method

    Cook the Jersey Royals in lightly salted boiling water until just tender – about 15-20 minutes. Drain well.

    About 10 minutes before the potatoes are ready, melt the butter in a large frying pan and add the onions and garlic, cooking them gently until very soft. Add the cumin seeds, turmeric, garam masala and ginger and cook for two more minutes.

    Tip the hot Jersey Royals into the frying pan and add the spinach, stirring it in gently until the leaves had wilted. (This will only take a couple of minutes). Season to taste, then serve.
