    What's for dinner?

    Hi everyone, I'm new here so go easy on me!

    There's nothing like like a good bit of veggie envy and with that in mind, what are you having for dinner tonight?

    I'm thinking about having
    • Spinach & Corn Tamales
    • Brown Rice
    • Merlot
    • and maybe some Pinto Beans

    Well, last night, I cooked a Thai red curry with chilli and garlic paste, coconut milk, red peppers, sugar snap peas and basil. All on a bed of jasmine rice. Yummy!

    I was really lazy last night - had a veggie moussaka from Waitrose, with rocket salad on the side which I jazzed up with flaked almonds, cherry tomatoes and diced cucumber. Lovely though...

    I'm in the mood for a pizza tonight... I think broccoli and veggie stilton is a winner; if you haven't tried it yet, you are missing out!

    I was terrible last night, caved in and had chips from the new chippy but I did check what they were cooked in first (vegetable oil - yippee!).

    Tonight will be my favourite - a simple tomato pasta sauce (a little Lazy Garlic gently fried before adding some good quality tomatoes and a little basil to finish) over a huge steaming bowl of pasta and a nice salad from Waitrose. I'm absolutely hooked on their fresh balsamic dressing, it's to die for!

    I'm going to have a vegetarian lasagne tonight, using Quorn mince and soya milk in the white sauce (I find it makes a creamier sauce - I still put cheese on top though!) Serving it with lots of salad and maybe a glass or two of wine...

    Stuffed peppers with a tomato sauce for me, and cheese on top for everyone else

    Beans, green smoothies and stuff like that. Along with it, I take a natural supplement made up
    of banana. Thats the nice recipe for me all the time.

    You sound really healthy Ashu89, you've inspired me to dust off the smoothie maker... Tonight, I shall mostly be eating dauphinoise, Quorn ham (with plenty of Dijon) and some purple sprouting broccoli, asparagus and kale. I know they're not in season but I can't wait anymore! Naughty
