Tomato and Basil Pizza

Serves 2-4
Ready in 30 to 60 mins

Ingredients

  • 1 packet of pizza base mix
  • 1/2 jar of ready made vegetarian pizza topping
  • olive oil, for greasing and frying
  • 1 large onion, chopped
  • 1 garlic clove, peeled and chopped
  • 10 cherry tomatoes, halved
  • 150g vegetarian mozzarella, torn into pieces
  • fresh basil leaves
  • freshly ground black pepper
  • 100g kalamata black olives

How To Cook

  1. Preheat the oven to 220C/425F/Gas 7. Now make up the pizza base mix according to the pack instructions. Roll the dough out into a circle approx 5mm thick and place onto an oiled Pyrex pizza tray.
  2. Spread the pizza topping over the base. Sauté the onions and garlic in a little olive oil until soft and translucent. Arrange on top of the pizza base with the cherry tomatoes, mozzarella, basil leaves, pepper and black olives.
  3. Bake in the hot oven for 20 minutes or until the cheese is melted and golden brown. Enjoy!
