Halloumi and Pepper Panini
Ingredients
- 1/2 block of vegetarian halloumi, cut into four slices
- a little rapeseed oil
- individual-sized ciabatta or baguette, halved lengthways
- 1 tsp vegetarian pesto
- 1 tbsp roasted peppers from a jar, drained
- salt and pepper
- lettuce leaves, to serve
How To Cook
- Heat a little rapeseed oil in a frying pan. Saute the halloumi slices for a few minutes on each side, until nice and brown
- While the halloumi is cooking, spread the top half of the sandwich with pesto, and arrange the roasted peppers on the bottom half.
- Place the piping hot halloumi slices onto the peppers, season with salt and pepper and add some lettuce to taste. Eat immediately!
