Halloumi and Pepper Panini

Ingredients

  • 1/2 block of vegetarian halloumi, cut into four slices
  • a little rapeseed oil
  • individual-sized ciabatta or baguette, halved lengthways
  • 1 tsp vegetarian pesto
  • 1 tbsp roasted peppers from a jar, drained
  • salt and pepper
  • lettuce leaves, to serve

How To Cook

  1. Heat a little rapeseed oil in a frying pan. Saute the halloumi slices for a few minutes on each side, until nice and brown
  2. While the halloumi is cooking, spread the top half of the sandwich with pesto, and arrange the roasted peppers on the bottom half.
  3. Place the piping hot halloumi slices onto the peppers, season with salt and pepper and add some lettuce to taste. Eat immediately!
